6oz Butter or Soft Margarine
6oz Castor Sugar
6oz Self Raiding Flower
3 eggs (at room temperature)
½ tsp Baking Powder
For a CHOCOLATE Victoria Sandwich, substitute 2oz Cocoa powder for 2oz of the flour.

1. Place butter (or soft margarine) and sugar ina warn bowl and mix until creamy - similar to whipping cream).
2. Add the eggs, 1 at a time, beating in-between and bringing the mixture back to a fluffy texture.
