Sandwich
Ingredients
6oz Butter or Soft Margarine
6oz Castor Sugar
6oz Self Raiding Flower
3 eggs (at room temperature)
½ tsp Baking Powder
For a CHOCOLATE Victoria Sandwich,
substitute 2oz Cocoa powder for 2oz of the flour.
for a COFFEE Victoria Sandwich, ,mix
2 heaped tspinstant coffee with enough warm water to make a runny paste.
Method
1. Place butter (or soft margarine) and sugar
ina warn bowl and mix until creamy - similar to whipping cream).
2. Add the eggs, 1 at a time, beating in-between and bringing the mixture
back to a fluffy texture.
3. Combine the flour and the baking powder and add to the mixture and
incorporate slowly. Once the flour has been incorporated, STOP mixing
immediately - overbeating at this stage will spoil the cake.
4. Divide the mixture equally between 2 8" sandwich tins.
5. Bake in a moderate oven (180°C) for approx 20-25 minutes.
6. Remove from the tins and place on a cooling rack.
Butter Icing Ingredients
4oz Butter or Soft Margarine
6ox Sieved Icing Sugar
for COFFEE Flavouring, make up mixture as for the cake
for CHOCOLATE flavouring, add 2 oz Coca powder to the icing
sugar.
Butter Icing Method
1. Place all ingredients into a warm bowl and
beat until soft and fluffy.
2. Use half of the mixture to sandwich the ckaes to gether and the other
half for the topping
3. Decorate with chopped nuts if desirable.
